What has it been, like 10 or 11 days since my last post?? Whooops, i want to be more consistent and usually it would really bother me but I’ve decided to just let it go over my head. I’ve been really busy as of late, so much on mind and I just haven’t made blogging a priority, I would like it to be but I guess I just need to set time aside each day, it’s definitely much easier to set aside time each morning (I’m most alert then) then to go a few days without posting bc it just overcomplicates things, and that’s the last thing I need right now. So i’m going to pretend I’ve been posting every day and just continue on my merry way 🙂 so what have I been up to? Well first and foremost, I ended my vegan challenge early, this past Thursday to be exact, I just wasn’t feeling my best and craving sugar all day every day. Usually I would feel as if I “failed” but I’m glad I listened to my body, usually I would continue on regardless of how I feel, but I’ve had bad experiences in the past and would like to keep away from them as much as possible. I broke my challenge with home made chicken salad, one my favorites! Sorry I don’t have a picture. It’s basically shredded chicken, plain yogurt, sunflower seeds and craisins…nom nom. Surprisingly enough I didn’t get an upset stomach, I usually do whenever I take a break from meat, guess my body really needed it. I’m hoping the sugar cravings will go away, speaking of which, i’ve been having sugary cereals again….cinnabon anyone? I’m not going to beat myself up though, lunch and dinner has been pretty good and I haven’t been snacking as much, something I was really trying to get away from, it could be worse. But now that yogurt is back in my life, breakfast should take a turn for the better. As for my other may challenges, FAIL….but it’s ok, I’m at least drinking more water and taking my vitamins, I need to be better about ACV but it’s such a chore to take, I’m thinking to get the capsule form, hopefully it will be just as beneficial?

We shall see.

Anyway we’ve been having beautiful weather, yesterday a few friends and I hung out in downtown lagrange, a really cute area and dined at Prasino, a organic, sustainable restaurant. Delish. I wasn’t too hungry so i just went for chilled beets with goat cheese, I’m going to recreate it at home this week, very simple. Basically beets, goat-cheese, candied pecans, basil, drizzled with balsamic vinegarette. Sorry I don’t have a picture, we dined outside and my phone doesn’t have a flash. Afterwards we went next door where I had pomegranate and peanut butter frozen yogurt, yaa not a good combo, I usually pick just one but I was feeling adventurous and my friends were really going at it. I topped it off with mochi and mango bursting boba, anyone ever try boba? It’s a bit like tapioca pearls, wait it may even be a variation of tapioca…ah don’t feel like researching it right now! Lol but ya it was a very relaxed night, definitely feeling like summer.

High 87 today! Woohoo time to get some color, but I need to first buy some sunscreen, I’ve been getting microdermbrasions every 3 weeks and it’s crucial I protect my skin or I’ll be undoing all the work. I can count on one hand (ok two hands) how many times I’ve worn sunscreen, so this is a new concept for me haha yes I’m 21 and have premature wrinkles (use to lay out and use tanning beds like it was my job) So I’m looking for an all natural, non-greasy sunscreen!

Off to whole foods I go!

I’ve been MIA since Thursday, whoops! Don’t really have an excuse. These last few days I have felt so derailed, I’m still on this vegan challenge but sugar has got the best of me… I went without processed sugar for two years is beyond me! Those darn sugary cereals my mom buys, i’ve stayed away from
them for so long but every so often I can’t help myself, like these last few days!! When I give in I feel so defeated and guilty, I hate the feeling, I mean is a moment on the lips really worth a lifetime on the hips? I think NOT! So time to get back on track, i’ve decided to not post daily eats anymore, its just too boring! But I will give a rundown every once in a while. For breakfast I had oats with almond milk and frozen berries and lunch today was a little interesting, I had tofu lettuce wraps (ask me for recipe if interested), I think I over-baked the tofu a bit, but I didn’t mind the crunchiness that came out, I paired it with some broccoli salad. Delish! I’m already feeling back in line 🙂

Very simple recipe

1 pound broccoli
1 cup chopped red onions
2 teaspoons of dijon mustard
3 tablespoons of lemon juice
1/4 cup of olive oil
1/4 cup parsley (I suggest fresh)


Trim broccoli and cut into bite-size pieces enough to make 4 to 5 cups

Bring enough water to boil to cover broccoli. Let broccoli cook 3 to 5 mins, until crisp-tender; drain. Put drained broccoli in salad bowl; sprinkle with chopped onion

Meanwhile, put mustard in mixing bowl and add lemon juice, whisking rapidly. Add oil while whisking. Add salt to taste, then the parsley. Spoon dressing over broccoli. Serve broccoli salad hot, lukewarm or cold. Serves 4

What do you do when you get a bit derailed from your health goals?

Started off with oatmeal, almond milk, apple concoction and then later had some cherry tomatoes and baby carrots with spicy brown mustard

For lunch I had a yummy salad, topped with a spicy black bean burger and yesterday’s bean salad, such a great mix!

By the time 3 o’clock came around I was ravenous so I had small handfuls of each…I should have just had an apple


Around 6 I had a salad from subway, wasn’t even a tad bit hungry, I really need to learn to listen to my body..intuitive eating anyone?


I really want to learn how to listen to my body, feeding it when hungry and stopping with satisfied. I got to say I use to have this down, I only ate when I was hungry, till the point I felt my stomach growl.

Today is a new day, I’m going to listen closely to my hunger cues, what are YOU going to do today?

Starting off on the right foot

These posts might get a bit annoying, but I feel it’s the best way to keep me accountable this month.

I started my morning off with oatmeal in which I added 2 small apples and some raisins


I munched on a wheat-berry salad while I made my raw Spanish rice and then had half of that mixed bean salad with hot sauce followed by an apple


Some snacks I had were baby carrots, almond milk and another apple



For dinner I had some polenta with dijon mustard and cooked red peppers


I didn’t get the chance to fit in a workout because I was busy with hw and catching up on some shows, good excuse right? I think I fought with myself back and forth for about 2 hrs about whether or not to go to the gym, I’m such a morning person and that’s the best time for me to go to the gym or afternoon the latest.

May Challenges

I love the beginning of new months, setting challenges and trying to attain them throughout the month. Here are some May challenges

1. My sister and I have decided to go vegan for the month…goooodbye yogurt 😦 and no processed sugar or coffee

2. 64 ounces of water a day

3. 1,200 cals a day (trying to lose like 7 pounds- realistically)

4. No more than 400 cals before noon

5. A shot of Apple Cider Vinegar a day( great for your skin, digestion, and metabolism).

6. Take Fish Oils and B-12 daily

7. Try a new class this month- I’m in a exercise rut

8. Read a Proverb a day

I’ll be posting my eats every night for the month of May, it’ll be a good way to keep me accountable.
